My Journey So Far

Starting his career in Scotland in 1992 Mark has and continues to have a very successful career worldwide. Working his way up from Trainee Chef to Head Chef he has distinguished himself and the Restaurants gaining plaudits everywhere.   

For 5 years (1999-2004) Sydney Australia tasted the delights of Marks menus gracing some of the top establishments there.

Returning to Scotland Mark set about creating his high standard’s in Glasgow reaching top awards in Room Restaurant @ One Devonshire Gardens, Kilcamb Lodge Hotel in Strontian and The Dryburgh Abbey Hotel in the Scottish Borders where Mark is the Head Chef. 

Mark is also one of the teachers at the Braehead Cook School twice a month, and has featured in numerous magazines and newspapers, throughout Britain and Australia.

In March of this year Mark was only too happy to contribute to The Caledonian Kitchen Cookbook, “To be published next to some of Scotland’s best chefs and the prime minister of Britain was to good an opportunity to pass up". Not to mention the great cause it supports.
